Grilled chicken liver kebabs

PREP/COOK TIME:

INGREDIENTS:

Chicken livers (one palm per person) (chicken hearts can be used as a substitute here)

Ground cumin

Olive oil

4 Garlic cloves

Salt & Pepper

½ teaspoon ground chilli

Fresh basil

Lettuce/mixed salad (2 cupped hands)

Whole wheat flatbread (1-2 per person)

Lemon juice

chilli sauce

Fage Greek yoghurt (1 tbsp per person)

DIRECTIONS:

  1. Mix the ground cumin with oil, crushed garlic, chilli, salt and pepper in a medium bowl. Add the livers and stir to coat.

  2. Preheat grill to high.

  3. Thread the livers onto 4 your skewers .

  4. Place the livers under the grill and cook until the livers are just cooked through (approx. 3 to 5 minutes total). Turn the livers once half way through cooking.

  5. Pop your flatbreads either in the toaster or under the grill (if you have room). You’re just warming them up so they will only need a minute or so.

  6. Once cooked, lay your kebabs on top of your flatbreads along with the salad leaves and basil.

  7. Add your chilli sauce and yoghurt to your taste.

  8. Drizzle with lemon juice and extra virgin olive oil to you taste.

NUTRITIONAL EVALUATION:

Liver is a very nutrient dense food, particularly rich in vitamin A which is essential for supporting fast reproducing cells such as the gut lining, retina and skin. Liver is also one of the richest sources of vitamin B12, which is involved in the formation of red blood cells and DNA, as well as playing a role in healthy brain function and energy production.

Olive oil is a healthy monounsaturated fat, rich in antioxidants. Olive oil can be supportive of cardiovascular health and can reduce inflammation thanks to a component called oleocanthal.

Wholegrain flat bread is a source of complex carbohydrates, and has a larger amount of fibre than white flatbread. Fibre is essential to feed the “good” bacteria in our gut. Flatbread is not yeasted like normal bread would do, and for this reason might be more indicated for people suffering from sensitivity to yeasted products.

Lettuce is mostly water and fibre, but is a great source of vitamin A (vital for rapidly reproducing cells such as the gut mucosa and eye retina) and vitamin K which is involved in blood clotting. If choosing a different salad rocket is a great choice; part of the cruciferous vegetables family.

Cruciferous are a great source of antioxidants, such as carotenoids like lutein, zeaxanthin and beta-carotene and sulfur-rich compounds known as glucosinolates which can be protective against certain type of cancers, supportive of the cardiovascular system, hormone clearance and liver detoxification pathways. ⁠

Like all green vegetables are rich in chlorophyll (it is what gives green colour to vegetables). All green veggies are a great source of magnesium, a mineral associated with relaxation and nervous system health.⁠⁠
