Coconut Chia Seed Yogurt

INGREDIENTS:
Live Coconut Yogurt (1 cup)
Chia Seeds (1/4 cup)
Cinnamon
Strawberries (chopped) (1 handful)
DIRECTIONS:
Pour your yoghurt into a suitably sized pot and stir in your chia seeds.
Leave overnight so that the chia seeds soften and combine with the yoghurt.
Add in your strawberries when you are ready to eat or seal all the ingredients in a container with a lid and take with you if you’re on the go.
NUTRITIONAL EVALUATION:
Provides plenty of protein, vitamins from strawberries and fibre from the fruit and chia seeds. Chia seeds are also an excellent source of omega3 fatty acids which can help lower inflammation, which can be raised if there is an injury or muscles have been worked strenuously. Proteins in the yogurt are ideal for muscle repair. Fermented foods such as yogurt can also help support a varied and numerous microbiota which can positively impact gut health. Good gut health has been associated to improved immunity, lower inflammation, better mood and improved digestion.
Strawberries can help raise insulin enough to promote protein uptake from the muscles and restore muscle glycogen reserves. Strawberries are also a great source of vitamin C, a powerful antioxidant associate with improved immunity and involved in collagen production (also bones have collagen!)
