Eggs on toast with spinach & onions

DIRECTIONS:

  1. Dice up your onion and fry in some olive oil until it has softened and turned golden.

  2. Boil some water and add your eggs for 6mins.

  3. Remove your eggs from the water and set aside in a bowl of cold water.

  4. Pour out most of the boiling water, leaving only a few cm in the bottom of the pan. Add your spinach wilt.

  5. Pop your toast in the toaster.

  6. Finally de-shell your eggs and bring the whole dish together with the eggs sat on top of the other ingredients. Slice both eggs in half and what the yolks run over the dish.

Rye bread (2 slices)

Onion (half)

Spinach (2 hands cupped together)
